 I made dinner tonight and thought that the people who read my blog might like to try one of my favorite things to make, especailly with summer coming up.

 

It's easy to make and you only have to boil water for the ramen noodles. So no oven heat!! That's what makes it so great during the hot summer. The picture isn't exactly how I make it, but it is pretty close. I forgot to take a picture of what I made so I found this one online.



Boil Ramen noodles, but DON'T  use the seasoning on them.
Get some peanut sauce from your local Thai restaurant. The sweet stuff. Its like a combo of sweet and sour and chili pepper sauce.
Slice up cucumbers, red bell peppers (I like to chop these into bite size pieces), lettuce, and mint. Also chop some peanuts up or get them pre-cut up. Then get some very thinly sliced roast beef from the deli.

Arrange all that on the plate as show above and pour the peanut sauce over the noodles ( I pour it over all of it because it is sooo good.)

Or you could just toss it all together like a big salad. That's how it gets eaten anyway. People mix it up on their plate when they get it. It tastes better.

Cheap, quick, light. It's a very good lunch or dinner.
